Guiltless Sweet Potato Casserole

Sweet Potato Casserole with Oat Topping

Ingredients:

For the filling:
  • 4 large sweet potatoes, peeled and cubed
  • ½ cup unsweetened almond milk
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
For the topping:
  • ½ cup rolled oats
  • ¼ cup chopped pecans
  • 2 tbsp melted coconut oil
  • 2 tbsp pure maple syrup
  • ½ tsp cinnamon

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a baking dish.
  2. Boil sweet potatoes until tender, about 15 minutes. Drain and mash.
  3. Combine mashed sweet potatoes with almond milk, syrup, vanilla, cinnamon, nutmeg, and salt. Spread into the baking dish.
  4. Mix oats, pecans, coconut oil, syrup, and cinnamon. Sprinkle on top of the casserole.
  5. Bake for 25-30 minutes, until the topping is golden.
