Sweet Potato Casserole with Oat Topping
Ingredients:
For the filling:
- 4 large sweet potatoes, peeled and cubed
- ½ cup unsweetened almond milk
- 2 tbsp pure maple syrup
- 1 tsp vanilla extract
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp salt
For the topping:
- ½ cup rolled oats
- ¼ cup chopped pecans
- 2 tbsp melted coconut oil
- 2 tbsp pure maple syrup
- ½ tsp cinnamon
Instructions:
- Preheat oven to 350°F (175°C). Grease a baking dish.
- Boil sweet potatoes until tender, about 15 minutes. Drain and mash.
- Combine mashed sweet potatoes with almond milk, syrup, vanilla, cinnamon, nutmeg, and salt. Spread into the baking dish.
